I have been trying to eat less chicken and more seafood so I have more variety in my diet. Luckily, I am obsessed with Pinterest, and I found dozens of recipes that I can’t wait to try. So far, my favorite has been this Shrimp and Asparagus Stir Fry. It was quite filling for being so light, and actually pretty easy.
Ingredients
- 1 pound of shrimp meat (I didn’t want to get whole shrimp because it takes too long to de-tail them all)
- 1 bundle of asparagus
- 2/3 cup of water chestnuts
- About 3 tablespoons olive oil (for sautéing and to prevent sticking to the pan)
- About 3 tablespoons of gluten free soy sauce
- 1 tablespoon of minced garlic
- 1 teaspoon of ginger
- Salt and pepper to taste
Instructions
- The shrimp meat should come from the deli already cooked. If not, sauté the shrimp in about 1.5 tbs of olive oil until completely cooked.
- Chop the asparagus into roughly 1 inch chunks
- Sauté the minced garlic and asparagus in olive oil until the asparagus is soft
- Add water chestnuts and sauté until they are brownish on both sides
- Add the shrimp, soy sauce, and ginger
- Taste test! Add more soy sauce and/or ginger if it needs flavor
- Salt and pepper to taste
Super easy right? This recipe was enough to feed two plus a little left over for a side dish with my lunch the next day. Happy cooking!
